Cereal Science and Technology – composition, value addition and processing of African cereal grains; Nonalcoholic cereal beverages; Food fermentation; Processing of other tropical plant foods – fruits and vegetables.  “Plants and the amazing small molecules that they produce ...... may offer us the key to achieving a more ambitious goal: Living long and living well”..... Experience:
Mr. H Silungwe has more than 20 years work experience in Research,   more than 8 years of was in the Government research department and more than 10 years lecturing and management experience at Tertiary level. He has supervised more than 8 honours degree students in food Science and technology and 3 B.Sc Agricultural economics degree students. He has served in various capacities  including, Chairperson of Curriculum development committee at  Fort Cox College of Agriculture and Forestry, Head of Academic  section and Total quality management  and quality assurance.

Research Interests:
- Evaluation of Beta-carotene among the sweet potato cultivars produced in Limpopo Province
- Rheological Properties of  foods
- Sensors in food processing
- Computer vision in evaluation of the quality of foods
- Sensory Analysis

Member of South African Association of Food Science and Technology. Studying towards MSc Food Science and Technology. The research project involves the investigation of the effect of cultivars, age (maturity) and cooking methods on the quality attributes of sweet potato products.

Field of Expertise: Food Safety, Quality assurance and Hygiene, Nutrition and
Food chemistry/biochemistry.
